About Us

“My approach to coffee brewing is simple: Venture by taking action, stumble through experimentation, and eventually master the cup that suits your taste.” — Heramb Deware

Hi, I’m Heramb Deware, the person behind Brew Variables.

Since 2012, I have been experimenting with coffee brewing as a personal hobby that gradually grew into a deep passion. Brew Variables was created to share that journey and to help other coffee enthusiasts learn how to make better coffee at home through simple techniques and thoughtful experimentation

How My Coffee Journey Began

My introduction to manual coffee brewing happened during my work visits to Germany, Switzerland, and France. Experiencing specialty coffee culture in these countries exposed me to the precision, creativity, and craftsmanship behind brewing coffee by hand.
What started as curiosity soon became a long-term exploration. Over the years, I began experimenting with different brewing methods, grind sizes, brew ratios, water temperatures, and extraction techniques.
Professionally, I work as a freelance software consultant with over 28 years of experience, and coffee brewing has been my creative pursuit alongside my technical career.

Learning from the Global Coffee Community

While exploring manual brewing, I closely followed many influential voices in the specialty coffee world whose work has inspired coffee enthusiasts around the world.
Some of the people who have shaped how I think about coffee include:
    • Tetsu Kasuya
    • Tim Wendelboe
    • James Hoffmann
Over the years I have built a comprehensive home brewing setup, experimenting with almost every major manual brewing device used in specialty coffee.
These years of hands-on experimentation eventually led me to start Brew Variables workshops, where I share practical brewing techniques with fellow coffee enthusiasts.

The Philosophy of a Home Barista

Brew Variables is built around the idea of the Home Barista.
A professional barista works in a café environment where consistency, speed, and workflow are critical. A home barista, however, has a completely different advantage: the freedom to experiment.
At home, brewing coffee can become a creative and personal process. You can explore different variables such as grind size, brew ratio, water temperature, and pouring techniques to discover what tastes best to you.
One belief I strongly emphasize is this:
You do not need to learn the entire science of coffee to make great coffee at home.
What matters more is:
    • Learning a simple and reliable brewing technique
    • Practicing it consistently
    • Gradually adjusting variables to suit your taste
Brewing coffee is not about chasing a perfect formula. It is a journey of exploration and discovery.
Over the past decade, I have traveled a long way on this journey through experimentation, curiosity, and continuous learning. Brew Variables exists to help other coffee enthusiasts start their own journey with a head start.

My Brewing Philosophy

Inspiration Over Influence

The specialty coffee world is full of inspiring brewers and techniques. Learn from them, observe their methods, and understand their thinking. But instead of copying blindly, use their work as inspiration to develop your own brewing style

Change Only One Variable at a Time

Coffee brewing involves many variables—grind size, brew ratio, water temperature, pouring technique, and more. Understanding these variables is important, but when experimenting, change only one variable at a time. This is the most reliable way to understand how each factor affects the final cup.

Coffee Is an Experience

Coffee is more than just a drink. It can be a moment of happiness, a quiet meditation, or a peaceful moment of solitude. The ritual of brewing coffee can be just as meaningful as the cup itself.

Beyond Coffee

Outside of coffee, some of my other interests include:
    • Hiking and exploring nature
    • Indian classical music
    • Landscape photography
I am also deeply passionate about teaching and sharing knowledge, which ultimately inspired me to start Brew Variables.

And if you ever feel curious to explore coffee brewing more deeply, I would be happy to share this journey with you in one of the Brew Variables workshops
